Sous Chef

Position Description:Leadership:

-Partner with the Chef to create a cohesive team within the kitchen.

-Maintain a positive presence within the kitchen and restaurant.

-Serve as a role model and member to the management team.

-Support all decisions made by the management team and present a united front to the staff.

Production:

-Assist the Chef in setting appropriate prep levels and managing production.

-Be knowledgeable and able to perform in any line position as needed.

-Manage production of special items, soups and intensive menu items.

-Be able and expected to offer guidance and direction to the line cooks on a continual basis, in particular to the execution of the food for large private parties.

Administration:

Assist the Chef in all administrative duties including but not limited to:

scheduling, ordering, new employee orientation, training and documentation (i.e., employee evaluations, write ups, new hire packets and separation notices)
Quality Assurance & Sanitation

-Oversee the strict adherence of Graces Restaurant Group (GRG) standards of quality for food served to include:

oFreshness
oProper handling & storage
oProper use of techniques and cooking procedures
oTaste
oPortion Size
oPresentation

Financial & Profitability:

-Responsible for working with the rest of the management team to maximize sales and optimize profits through the management of food and labor cost.

-Participate in P&L review meetings in order to gain an understanding of everyone's role in the financial success of the restaurant.

-Partner with Chef on monitoring daily labor reports and minimizing overtime, weekly assessments on food cost based on purchases.

-Develop strategic systems to reduce costs in the kitchen.
