Executive Chef for Terrain Garden Cafe, Westport CT
Overview:
Terrain Garden Cafe is seeking an Executive chef to create an exceptional customer dining experience for our guests. The Cafe is a unique destination within the innovative new garden center in Westport, CT scheduled to open April 2012. Our menu will feature a Farm to Table aesthetic, where we celebrate the best of locally-sourced, organic and in-season offerings in a beautiful garden and patio setting.
The Executive chef position provides leadership to the back of house staff, supervising and developing the performance of all staff members. Applicant must have a passion for sourcing local, organic foods and creating innovative menu offerings. Also, the Executive chef should be a strong leader with a powerful vision for the dining experience, collaborate effectively within a team, and set high standards for excellence for service levels and operations. The position is responsible for operational efficiency and food quality of the kitchen, including managing the sous chef, prep cooks and line cooks.

Situated in a luxurious indoor-outdoor environment, our on-site nursery is flanked by a cafe and garden terrace, providing the ideal environment to host events and workshops.
Responsibilities
-Creating an innovative menu with local, organic and seasonal offerings.
-Supervise the kitchen staff.
-Establishes and delegates work duties in each kitchen area.
-Preparing and cooking meals to order according to established policies and procedures.
-Responsible for maintaining high food quality.
-Controls waste and food cost.
-Ordering, receiving, storing, inventory and issuing all food products.
-Demonstrating cooking techniques and proper equipment usage to the kitchen staff.
-Responsible for training of kitchen personnel and maintaining morale of the kitchen staff.
-Responsible for health and safety regulation enforcement and maintaining a clean and safe kitchen.
Qualifications
-Minimum 3 years of experience in an executive chef position.
-Must be energetic, positive, friendly and passionate about the restaurant industry.
-Be able to work in a standing position for long periods of time up to ten hours daily.
-Be able to reach, bend, stoop and frequently lifting up to 50lbs.
-Must have the stamina to work 50 to 60 hours per week.
