Coordinate, plan and supervise the production, plating and presentation of primarily the cold food at all Banquet events in a cost effective, safe manner to meet/exceed customer expectations and attract future business. Responsible for the daily production of all cold banquet food. Assists in the creation and recommends menu changes. Recommends and implements procedural/production changes.
Manages the daily production of food for all the catered events; control food and labor costs, ensures preparation, plating and presentation standards are maintained, the appropriate quantity of food is ordered and prepared and safety standards and regulations are followed to provide top quality food. Ensures compliance with health, safety, sanitation and alcohol awareness standards. Interviews, trains, supervises, counsels, schedules, and evaluates staff .
This position reports to the senior banquet chef and is primarily responsible for the gardemanger section of the banquet kitchen.
-A Culinary degree is required.
-A minimum of two years as a sous chef or lead cook in a similar operation required for external candidates.
