Position Description:We are a professionally run family partnership of two brothers that have been working together for nearly 35 years. Our Highlands, NC restaurant was founded by the principals that run it today & has enjoyed a fine reputation since its inception in 1984. Our upscale Italian restaurant offers up top quality offerings in seafood, pasta and main course meat varieties and wine cellars that offer 1500+ selections. As homemade applies to nearly every category from pasta to pancetta, desserts to our bread, we do it all on a daily basis. Butchering of meats, whole fish, sauce production, ravioli, gnocchi, custards etc. are done in house.

As an employer, we are searching for just the right person to join in our endeavors. We aspire to continue being the very best we can be in offering up a great dining experience for our customer and maintain and enhance our current good standing in our community. We are the most recommended restaurant in town by concierges and local business alike. There is a reason why we have been at or near the top of TripAdvisor.com's list of recommended dining destinations for a few years now.

We can offer a really enticing living for an individual that can help to further the excitement that we like to bring to the dining table for our customer. We may be able to offer you a position that can give you the room to grow as a Sous Chef and expand your personal knowledge of all that encompass our kitchen, and then some.

We are not looking for a short-term or temporary individual but one that could potentially be given the reign to run our kitchen one day.

The position would encompass production of daily specials, responsibility for production of the employee meal and be the team leader from the Saute station during nightly dinner service. Salary would be commensurate with experience and additional performance based bonuses may be tied to food cost, etc.

The Sous Chef we aspire to hire could blossom into such a position in the foreseeable near-future. Paoletti's is not a corporate or rigid working environment. We seek an individual that is hands on and looking for this type of high quality employer- and one interested in helping keep our restaurant one of the top dining destinations in the southeast.
