We are looking for a sous chef/executive sous chef with the ability, passion and drive to eventually assume the position of chef de cuisine in our Northern Italian Restaurant.
We are a single operation, fine dining restaurant, highly critically acclaimed and well-respected for many years for our reputation for quality. All of our food is prepared from scratch, using locally sourced, seasonal ingredients. A trip to the farms is a part of our daily routine and we have a small herb garden on property.
We make our own breads, pastas, pastries, sausages - even some vinegars and cheeses, and smoke our own meats and fish.
Our ideal candidate must have at least 5 years of fine dining cooking experience, some managerial experience and excellent communication and organizational skills.
He must be a creative, self-motivated team player, comfortable with scratch cooking and have a facility with Italian regional cuisines. He must have mastered the basics of fine cooking and be able to marry time-honored traditions with a modern sensibility.
He must be passionately interested in his craft and aspire to creating and maintaining the highest standards.
Our ideal candidate should have a reverence for the Italian insistance on freshness and local sourcing, the French respect for organization, the Spanish sense of intellectual curiosity and the Asian art of simplicity.
