As the Sous Chef you will report directly to the Executive Chef, and will have the opportunity to share her passion for using the finest, freshest ingredients to produce contemporary Italian dishes that reflect the very high standards of food quality and presentation for which the restaurant is known. You will have responsibility for the daily supervision of our very stable brigade of talented cooks.
Among your daily responsibilities will be expediting either at lunch or dinner ,butchering meats and fish, inventory control of high cost food items, daily payroll control, ordering of food, kitchen supplies, cleaning supplies, uniforms, etc., and maintaining superb sanitation and cleanliness standards.
In addition to a highly competitive salary, you will be eligible to earn monthly bonus equal to 15% of your salary. Bonus is based on the Sous Chef's ability to achieve budgeted food cost, labor cost, and other direct operating controllables. Other benefits include health insurance, dental reimbursement, 401K, paid vacation, and tuition reimbursement.
1) You Must be Nice.
You simply must deeply believe that everyone with whom you work is entitled to be treated with EXACTLY the same respect and dignity that you, yourself, expect. If you want to be the king of the kitchen, or have a huge ego, or are prone to yelling, please do not apply. In our company, no one is better than anyone else.
2) You Must be Able to Manage Others Well.
This means that you must be able to have your staff work WITH you and not FOR you to achieve the clear understandable, reasonable, time bound goals that you have set for them. You must have a proven record of experience (min. 1 yr.)in a high volume, fine dining restaurant with a large staff. You must also have outstanding organizational skills.
3) You Must be a Very Good Cook.
You'd better be hands on, willing, and able to work any station. Your kitchen staff will demand it in exchange for their respect. A degree from a respected culinary school is a plus, but is not required.
4) You Must be a Very Good Expediter.
During a busy dinner rush before our guests go to the nearby theaters, you will be required to coordinate the production of approx. 150 meals in less than 80 minutes.
