Oversee fine dining restaurant, banquets and day to day culinary operations. Menu writing, wine tasting, purchasing, recipe development, scheduling, ordering, training, coaching and supervision of staff.
Minimum 10 years overall culinary experience with at least two years Banquet experience as Chef and two years experience as Chef de Cuisine in a 4 star or ultra luxury hotel or restaurant. Formal culinary training is preferred or an equivalent combination of education and work related experience.
Demonstrated experience in leading and developing people.
Strong verbal and written communication skills.
Knowledge of hotel/resort operations management to include quality, operations and marketing/sales principals.
Solid understanding of financial analysis in order to drive revenue and make decisions affecting the finances of the business.
Familarity with operating inventory control procedures.
Menu planning and creativity a must.
Exceptional culinary skills and must be 'hands on'.
Must have developed language skills to the point to be able to read and understanding instructions, safety rules, etc.
