|Position Description:||The Inn at Dos Brisas (www.dosbrisas.com), a Forbes 5 Star Relais & Chateaux is seeking a talented, dedicated, promotable, pastry chef to join its dynamic team of professionals. Now including the renowned Executive Chef Craig Shelton, this is an enviable platform that endeavors to provide the finest culinary experience in the United States.|
The Inn is located on Dos Brisas Ranch, a 313 acre certified organic farm and horse ranch, situated one hour from downtown Houston and two hours from Austin, TX. As one of only 21 Mobil Five Star restaurants in the country, and the only in Texas, we pride ourselves in delivering the finest dining experience in our state. Central to our culinary mission, is the close interaction between our staff certified organic farmers and our kitchen. Our bucolic location, set amidst rolling pastures and farmland, allows for a unique dining experience.
We are not a high volume restaurant, nor do we choose to be. Our reservations are limited, by design. We currently feature four casitas for overnight guests, and are currently constructing eight additional expansive guest lodgings, featuring personal swimming pools.
The pastry chef will be responsible for all deserts, pastries, and breads at the Inn. All of our breads, pastry and dessert items are prepared from scratch. Experience in wedding cakes is also sought. Ideal applicants should have at least five years experience in a refined dining or bakery establishment. Although not a prerequisite, a formal culinary education is preferred. As we are a small property, some flexibility in schedule is needed. We do not, however, believe in overworking our employees. We do support continuing education.
Compensation is targeted to be in the $40 thousand per year range, with additional earnings tagged to increased responsibility and experience. Although direct report staffing is currently limited, we would expect the Pastry Chef to form the cornerstone of a five-star department, and to assist in recruiting efforts. Subsidized housing may be available. Although our restaurant hours are now limited to Thursday thru Saturday dinners, and a Sunday brunch and dinner, this will be expanding in the near future.
