Ridgewells is seeking an Executive Sous Chef that is creative, has great vision and a passion for cooking, who will be responsible primarily for creating innovative and authentic menus, and executing client menu tastings. Responsibilities include, assisting in the management of its high quality/upscale production kitchen, assuring that foods within departments are prepared in an organized, efficient and timely manner, implements presentation techniques and quality standards, providing hands-on assistance, assisting the Executive Chef in preparation of budgets, payroll management, and food cost controls. Other duties include, Events Kitchen Management, participating in the training of Event Designers and kitchen staff, maintaining recipe standards to ensure that food is produced to specification, scheduling kitchen employees to maximize efficiency and meet labor budgetary guidelines, maintaining food costs controls and other records and implementing company policies within food production departments. Applicant should have a degree from an accredited culinary program, exhibit superior cooking, knowledge of molecular gastronomy is a plus, at least five years of proven management record in fine dining/upscale business establishments, strong interpersonal relations, the ability to organize and prioritize work to meet deadlines, and computer skills.
