Creative Sous Chef's for Prestigious NYC Cultural Centers

RA is recognized as the nation's premier hospitality company, providing premium food services to museums, performing arts centers, aquariums, corporate dining, educational facilities and off-premise catering events in New York City, Boston, Hartford, Atlanta, Washington D.C., Philadelphia and Toronto.

We currently seek Sous Chef's for our multi-faceted, multi- unit,locations. The ideal candidates will have both high volume and fine dining Ala Carte experience while managing in a union environment. Operations have a focus on high quality food and operations range from Upscale Cafe's to Fine Dining operations. The ideal candidate will share in our belief in the quality value of delivering superior hospitality to our premier clients.

Reporting to the Executive Chef, the successful candidate may serve as the department head for culinary operations in the absence of Executive Chef. Duties include heavy food production of client meals and high level catering functions. Must adhere to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation. Responsible for handling, preparation and storage of perishable products. Additional duties may include menu development, inventory, ordering, sanitation, and hourly associate management to include hiring, counseling, coaching and development. Additional related duties and special projects as assigned

*Degree in Culinary Arts is preferred or equivalent professional experience
*Minimum of 5 years related experience in upscale food service operations
*Knowledge of food and industry trends with a focus on quality, production, sanitation, food cost controls, and presentation
*Ability to set up and distribute production sheets
*Supervisory, leadership, training, management and coaching skills
*Excellent communication skills both written and verbal
*Proficient computer skills to include; various computer programs, Microsoft Office programs, e-mail and the Internet
*Ability to lift, bend and carry up to 40 lbs.
*Knowledge of safe and sanitary food handling principles
*ServeSafe or Department of Health certification a plus
