"Chef De Cuisine" Fine Dining - Modern Steak House - Dallas, TX
We are looking for a Chef De Cuisine to lead a group of talented, motivated crew.
RESPONSIBILITIES:
-Designing, supervising, coordinating, and participating in activities of the culinary team and other kitchen personnel in consultation with the Corporate Executive Chef -Teaching, training and enforcing recipes and specifications to the culinary team -Food purchasing -Establishing and managing food and labor cost controls to ensure a profitable operation -Ensuring quality and consistency are at the highest level while maximizing the operation's personnel and resources
OUR IDEAL CANDIDATE WILL MEET THE FOLLOWING REQUIREMENTS:
-High volume grill / line experience - Prior Knowledge of Dry Aging will be a plus -Thorough knowledge of food handling and preparation techniques -Strong inventory and cost controls -Past experience developing production sheets and schedules, job duties, and timelines -Proven leadership skills to achieve goals while maintaining a high expectation of standards in regards to quality and presentation -Ability to build/sustain a team spirit and high moral -A guest service attitude and be able to instill that in all employees -Ability to consistently produce profit expectations -Basic knowledge of Microsoft Word, Excel, and Outlook -2 or 4 year formal culinary degree from an accredited Culinary School ( Or relevant experience) -At least 4 years in a culinary management position with at least one full year as a chef de cuisine Ideal candidate will be energetic enthusiastic, and able to handle large volume. Previous experience in luxury or fine dining establishment is REQUIRED. Must have hands on management style with strong communication and organizational skills and the ability to effectively manage and motivate a diverse staff.
