Position Description:Location (HP Pavilion):

The HP Pavilion in San Jose, CA formerly known as Compaq Center at San Jose and San Jose Arena is an indoor arena located in the heart of the Silicon Valley. The arena is also commonly called The Shark Tank or The Tank, both of which come from its primary tenant, the San Jose Sharks of the National Hockey League. HP Pavilion at San Jose houses the San Jose Sharks of the National Hockey League. It is also the venue for the annual SAP Open men's tennis tournament. The facility has also been home to the Golden State Warriors of the NBA during reconstruction of the Oakland Coliseum Arena, and the defunct San Jose Rhinos of RHI, San Jose Grizzlies of the CISL and San Jose SaberCats of the Arena Football League. HP Pavilion also hosts a number of concerts and family events.

The ARAMARK operation manages all food and beverage services including multi level concessions, suite box and VIP event/banquet catering as well as an onsite full service casual dining restaurant locally known as "The Grille." In addition to food services, ARAMARK also manages a full line of retail sports apparel sales at the venue.

Position Description:

We are currently seeking an Executive Sous Chef to lead the culinary team at the HP Pavilion, home of the San Jose Sharks - NHL. As an Executive Sous Chef for Sports and Entertainment, you will operate as a "hands on" working Chef and are responsible for the proper production and presentation of all food. You will lead and train kitchen personnel, supervise and coordinate all personnel engaged in preparing and cooking foods in related culinary activities. The Executive Sous Chef will also estimate food consumption and requisition or purchase food, select and develop recipes, standardize production recipes to ensure consistent quality, establish presentation technique and quality standards, plan and price menus, ensure proper equipment operation and maintenance plus ensure proper safety (HACCP) and sanitation in kitchen, based on ARAMARK standards. The Executive Sous Chef will oversee special catering events and offer culinary instruction, demonstrating culinary techniques. This position reports to the Executive Chef.

Candidate Qualifications:

This position requires a high level of organizational skills, and an understanding of leadership and project development while working as a "hands on" chef at the venue. Must demonstrate proven leadership and development of staff. Advise and recommends training and development as it relates to staff. Ability to manage in a diverse environment with focus on client and customer service. Support, implement and execute the Sports & Entertainment culinary program and brand development. Flexibility to relocate and travel throughout the West region.

Additionally, we seek the following skills:
-AOS/BS in Culinary Arts preferred
-Minimum 6 years of industry and culinary management experience
-Experience with HACCP requirements
-Ability to control food and labor costs including budget planning
-Understanding, support and development of sustainable cuisine
-Experience in demonstration cooking
-Menu writing and development ability of regional products and recipes
-P&L accountability and/or contract-managed service experience is desirable.
-Experience working in a union environment a strong plus
