VP of Culinary Operations

Position Description:Salary: $70,000 plus incentives

The VP of Culinary Operations is responsible for cultivating and being spokesperson for the 'culinary brand' of the resort. This Executive Committee member will also ensure maximum guest satisfaction that upholds all AAA Four Diamond standards. Also responsible for ensuring maximum profitability of all restaurants, Cook Academy and banquet operations at The Essex Resort & Spa.

Specific job responsibilities include, but are not limited to:

Provides the vision for designing, developing, directing, and implementation of the Resort?s culinary programming and menus.
Directly responsible for the oversight of interviewing, hiring, training, support, evaluation, development and scheduling of restaurant, Cook Academy, and banquet managers.
Directly oversees the F&B Director, Executive Chef, Cook Academy Head Chef, and Banquet Managers in the hiring, training, supervising and evaluating of staff. Determines staffing needs and utilizes resources appropriately.
Teaches several cooking classes each week as part of the Resort?s Cook Academy offerings.
Researches current food trends and integrates those into the Resort?s culinary programming.
Contributes to and assists with Food and Beverage Marketing programs.
Provides oversight and direction with the development and maintenance of the wine lists and beverage programs in conjunction with the F&B Director for fine dining restaurant, casual restaurant, Cook Academy and catering facility.
Ensures that costs associated with all food & beverage outlets are in accordance to the annual budget.
Responsible for developing relationships with the local community and attending public events that would promote the culinary programming of the Resort.
Serves as a role model by promoting good front-of-the-house/back-of-the-house communications, setting and modeling the standards for appearance, behavior and professionalism.
Ensures that direct reports are managing hourly staffing levels as well as scheduling appropriately to conform to budgeted guidelines.
Works with the F&B Director, Executive Chef, Purchaser, Cook Academy Chefs and Sous Chefs to ensure that budgeted food costs and net profitability goals are met.
Actively evaluates the business levels and standard operating procedures in conjunction with the F&B Director, Executive Chef to implement plans for continuous improvement and continual development of best practices.
Develops new menus for outlets in coordination with the Executive Chef.
Works holidays, nights and weekends as business levels dictate.

Bachelors or Culinary degree preferred. 7+ years related experience in the food and beverage industry required. 5 years of management experience preferred.

Possess strong leadership abilities with good coaching and training skills.
Ability to work with others and communicate with multiple departments and all levels of management.
Ability to multi-task and coordinate multiple projects.
Strong financial analytical skills.
Deadline conscious with strong drive, initiative and the ability to work well in time-sensitive situations.
Ability to make presentations to large groups of owners, managers and/or guests.
Must enjoy working with and communicating to the public.
Exceptional internal and external customer service skills.

Operational experience in the hospitality industry, preferably in resort environment with oversight of multiple outlets.
