Sous Chef Garde Manger

This position is responsible for food quality, production, and presentation of all cold food items in the Circular Dining Room, Room Service, and banquets.


Job Functions:

The quality and creativity of all cold food products in Circular Dining Room, Room Service, and Banquets.
Creative presentation of all cold food in Circular Dining Room, Room Service, and Banquets.
Scheduling and monitoring of Garde Manger staff.
Training and development of staff.
Maintaining kitchen safety and sanitation standards.
Ordering, requisitioning, and inventory control of all Garde Manger products.
Menu development and advancement in Garde Manger.


Basic Qualifications:

Must be at least 18 years of age or older
Minimum of 3 years in experience in kitchen management
Minimum 5 years experience in food preparation

Additional Qualifications:

Strong knowledge of 4 and 5 star/diamond service standards and various styles of service.
Ability to convey information, work within strict deadlines, multi-task, and react quickly and effectively to service challenges
Proven leadership, motivation, communication and organization skills
Ability to obtain ServSafe certification
Degree in culinary arts preferred.
Experience preparing ice carvings and other buffet pieces a plus


Working Conditions:

Physical requirements include the ability to lift and carry up to 50 lbs., walking, bending, standing 85% of the shift, and working in extreme temperatures.
Schedule will vary according to operating needs, but will normally be 7:00 a.m. to 5:00 p.m., including weekends, and holidays.
