Chef de Cuisine

Position Description:Claude Lane is seeking a Chef de Cuisine for a new venture! From the same team behind Cafe Claude & Gitane Restaurant, we are located in downtown San Francisco, just a few blocks from Union Square. Your role will encompass management & production activities of a restaurant, a small on-site catering operation, and a gourmet take-home retail store. Reporting directly to the owner, this hands-on Chef de Cuisine position is a multi-dimensional role highlighting your creativity, technique, and passionate spirit. You must be a strong leader, have exceptional organizational skills, and a true drive to excel in both personal and team goals.

Responsibilities include:
-Manage full restaurant kitchen personnel, including all related activities and duties
-Develop and select menus for restaurant, retail, and catering prior to submitting for owner approval
-Standardize production recipes, keep accurate records, and maintain staff consistency
-Establish cuisine presentation technique and quality standards
-Communicate with FOH management and staff to ensure guest satisfaction
-Communicate with catering director and retail store manager
-Periodic work with the press, appearing at public events, and representing the restaurant in other promotional situations
-Acute understanding of purchasing, receiving, inventory control and stock rotation
-Keep-up with culinary innovations & trends

Position Requirements / Desired Characteristics include:
-Passion for cooking with advanced skills & techniques
-Flexibility to be a great leader as well as team player
-Ability to assemble, train, and inspire a team of qualified, hard-working individuals
-Strong organizational skills, sense of priority, and ability to expedite under high pressure
-Knowledge and practical implementation of safety & sanitation methods, as per California Health Code & Law
-Appreciation for a diverse, multi-cultural environment, ability to speak in multiple languages is an asset
-High energy, positive attitude, willingness to learn, grow, and want to succeed
-Basic computer, accounting knowledge and skills
-Excellent communication skills

A minimum of two years experience as Chef de Cuisine is required.
