L'Etoile Restaurant of Madison, WI Seeks an Experienced Head Baker & Pastry Chef for early morning baking and prep. L'Etoile serves a variety of yeasted breads, baguettes and an assortment of laminated pastries.
Prior fine dining experience is required. Must have strong managerial and organizational skills.
This position demands creativity on a daily basis, excellent communication skills, and the ability to maintain the highest of culinary standards.
Applicant should also work well under pressure, be organized, flexible, self-motivated, willing to work long hours, and have a sense of humor.

Wage will be based on experience. This is a full-time salaried position, with benefits. Schedule is based on a minimum 50-hour work week.

Principal responsibilities include, but are not limited to:
Create, plan, implement and supervise the production of top quality pastries, desserts and baked goods in a cost-effective, professional manner.
Training and daily supervision of pastry & bakery staff.
Creates and recommends menu changes to the Executive Chef.
Supervise the daily production and distribution of all pastries, desserts and baked goods; ensure recipes and standards are followed, food and labor costs are controlled, the appropriate quantity is prepared and safety standards and regulations are followed in order to provide top quality goods for an enhanced guest experience.
Monitor and control the maintenance/sanitation of the pastry shop and equipment to ensure a healthy, safe work environment which meets/exceeds federal, state, and Hotel standards and regulations.
Order and maintain pastry & bakery supplies at par levels to ensure quality production. Assists Executive Chef to implement and monitor cost control and inventory to achieve a profitable result.
