? The primary function of the Sous Chef is to aid and assist the Executive Chef in all aspect of kitchen operation. It is the duty of the Sous Chef to be responsible for the operation of the kitchen in the chefs absence and including but not limited to the fallowing:
? Must have a solid foundation in classical and modern cuisine either thru an accredited school or outstanding work experience. ? Fundamental understanding of food and labor cost control. ? Finite understanding of state and federal sanitation rules laws and practices. It is also the responsibility of the sous chef to enforce proper sanitation practices and fallow thru when standers are not being met. ? Assist the chef in menu development, standardization, training and execution of all meals produced at Glendorn ? Document all maintained problems in the kitchen, i.e. kitchen equipment and machinery are in working order, properly maintained and report to the chef any problems that might arise. ? Responsible for the wholesomeness of the product, proper storage and rotation of food. Maintain clean and organized refrigerators and storage areas. ? Responsible for the enforcement of the daily and weekly cleaning checklist in the kitchen. ? Ensure all team members are informed of daily requirements. Communication with staff is imperative in order for them to do there job correctly. For example, number of guests, meal plan, dietary restrictions, BEOs, room service and other meals planned on property. ? Menu explanation of tasting menu to front of house and kitchen staff in absence of chef. ? Ensure all members of staff are treated respectfully and with dignity. ? Develop relationships with purveyors, local and national. Assist chef in ordering product in his absence. Utilize local farmers markets during season. ? Maintain the tidiness and cleanliness of kitchen at all times. ? Demonstrate strong leadership abilities and have proven ability to train staff. ? Demonstrate a pleasant demeanor, gregarious personality and sense of humor. ? Assist in daily maintained of garden and requisition of vegetables for daily menu planning. ? BE ORGANIZED! ?
