This position is responsible for food quality, production, and presentation of all cold food items in the Circular Dining Room, Room Service, and banquets.
Functions include training and motivating employees; monitoring production; organizing and setting up breakfast, lunch, and brunch buffets in the Circular Dining Room; creative displaying of cold foods, cold food display design, menu advancement; maintaining kitchen safety and sanitation standards; requisitioning supplies; maintaining desired food inventory levels and food and labor costs; maintaining high standards of food quality and presentation; and attending designated meetings.
*Must be at least 18 years of age or older
*Minimum of 3 years in experience in kitchen management
*Minimum 4 years experience in food preparation
*Degree in culinary arts preferred.
*Experience preparing ice carvings and other buffet pieces a plus
*Ability to obtain ServSafe certification
*Proven leadership, motivation, communication and organization skills
*Strong knowledge of 4 and 5 star/diamond service standards and various styles of service.
*Ability to convey information, work within strict deadlines, multi-task, and react quickly and effectively to service challenges
*Physical requirements include the ability to lift and carry up to 50 lbs., walking, bending, standing 85% of the shift, and working in extreme temperatures.
*Schedule will vary according to operating needs, but will normally be 7:00 a.m. to 5:00 p.m., including weekends, and holidays.
