SUMMARY OF POSITION
We are currently seeking a highly skilled and passionate Pastry Chef to lead our Pastry and Bake Shop team. The pastry kitchen will include a chocolate room and the latest equipment to produce top quality bread, pastries and show piece products. The candidate is required to have a proven background and to have worked in a high end Pastry Kitchen. He/she must have the ability to successfully lead a vibrant team as well as a thorough knowledge of Sugar and Chocolate work, in house baking of Breads and Breakfast Pastries, Cake Decoration and Plated Desserts.

Prepare and present innovative, high quality pastries, desserts and baked goods ? Ensure food production requirements are met and food is handled and stored safely according with the established health codes and standards set out by the Executive Chef ? Review daily production sheets and determine quantities and production schedule to prepare the necessary food items in accordance with established standards which will exceed Guests? expectations ? Adhere to all hotel recipes in order to maintain consistency and ensure all standards are met and followed ? Complete advance mise en place in a timely fashion to ensure there is no disruption to guest service ? Advise all colleagues of established standards and procedures set out by the hotel and the department ? Seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising Guest?s satisfaction
? Minimum 5 years Pastry experience with thorough knowledge of bread, pastry, sugar work, chocolate work and cake decorating ? Previous supervisory experience ? Experience in a full service hotel with comparable service and standards
