|Position Description:||The Statler Hotel at Cornell University's School of Hotel Administration has a job opportunity for an Sous Chef. The Statler is the showcase for Cornell's world-renowned School of Hotel Administration. Students and industry professionals from around the world come to the Hotel School to study hospitality service and management. The hotel also serves as a "Teaching Hotel", integrating several classes into hotel operations and providing career-related job experiences for students. The Statler is located on the beautiful Cornell campus overlooking Cayuga Lake and the city of Ithaca, the heart of the scenic Finger Lakes region of New York State. The hotel, with 153 rooms, is a full service property with a conference center, three restaurants and over 12,000 square feet of meeting and banquet facilities.|
As a member of the Statler Hotel's Culinary management team, this position is responsible for overseeing kitchen operations of the Statler Hotel. This includes: execution of a la carte operations, conference services, and banquet needs, supervising Culinary and Stewarding staff, developing and maintaining standards, maintaining budget goals, forecasting and execution of production, requisitioning, securing kitchen at close-up, and performing other duties. Additionally, this position will train students on how a chef would manage and operate a professional kitchen by developing and implementing procedures for inventory control, food sanitation and food preparation.
A.S. degree in Culinary Arts and 2 - 3 years of experience in a kitchen management position are requirements for this position. BS degree in Hospitality Management, preferred. Training experience with the ability to assess skill level of students and modify training as needed. Strong mentoring skills with the ability to mentor students to act/think like managers through role modeling, supervision and feedback. Strong communication and excellent organization skills required. Professional demeanor indicative of what is expected in industry and the ability to create, with course instructors and hotel management, a dynamic and experiential learning environment for students. Basic computer skills, including Word, Excel and food ordering system (ADACO).No relocation assistance is provided for this position.
