Executive Chef - Santa Clara Convention Center

Position Description:

(ARAMARK at Santa Clara Convention Center):
The Santa Clara Convention Center is located in northern Santa Clara, California. It serves as one of the large meeting and convention facilities in Silicon Valley, with 262,000 square feet of meeting space. The Convention Center manages a total Food & Beverage volume of $6 Million dollars annually. In addition, the site has recently opened its brand new ballroom seating 1, 400 customers which will increase managed volume of another $2Million per year. The recent construction also completed includes renovation of the main kitchen and creation of a new state of the art secondary kitchen Convention Center is located in the same complex with the Hyatt Regency Santa Clara and the Santa Clara TechMart Conference Center. It is adjacent to the VTA Great America light rail station and across the street from the Great America theme park.

Position Description:
We are currently seeking an Executive Chef for the ARAMARK operation at the Santa Clara Convention Center. As an Executive Chef you will train and manage kitchen personnel and supervise all related culinary activities. The Executive Chef will estimate food consumption and requisition or purchase food, select and develop recipes, standardize production recipes to ensure consistent quality, establish presentation technique and quality standards, plan and price menus, ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen. The Executive Chef will oversee special catering events and offer culinary instruction, demonstrating culinary techniques. The Executive Chef directly supervises kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases. The Executive Chef reports to the ARAMARK General Manager.

Candidate Qualifications:

Ideal candidates will possess a bachelor's degree or related culinary degree with 6+ years of industry & culinary management experience. Our Executive Chef must possess the following qualities and experiences:

?AOS/BS in Culinary Arts or equivalent experience
?Minimum of 6+ years of industry & culinary management experience.
?Ability to manage in a diverse environment with focus on client and customer service
?Knowledge and previous experience with HACCP
?Ability to control cost - food & labor
?Understanding, support and development of sustainable cuisine
?Experience in demonstration cooking
?Menu writing and development ability
?Computer literacy including word processing and presentation software
?Personnel development and culinary leadership experience
?Personnel training
?Organizational skills and ability to introduce or implement and execute S & E culinary program and brand development regionally
?Full P&L accountability and/or contract-managed service experience is desirable
?Previous work experience in a convention center or sports venue environment a plus
?Working in a Union house environment is preferred
?Qualified candidates must be able to work all event based hours
