Creative Executive Chef and Sous Chef Needed

Restaurant Associates is a national hospitality company based in New York City. We specialize in restaurants, corporate dining, cultural centers and off-premise catering. Reporting to the Foodservice Director, the successful candidate serves as the department head for culinary operations with duties that include the food production for caf?s, retail operations and catering functions. Adheres to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation. Responsible for handling, preparation and storage of perishable products. Duties also include menu development, inventory, purchasing, labor and food cost controls, maintaining sanitation standards, and personnel management to include hiring, coaching, counseling, training and developing. Additional responsibilities include but not limited to the following:
?Participate in employee meetings and training programs
?Conduct safety, sanitation and maintenance programs
?Maintain food cost while ensuring quality standards
?Maintain an active role in managing team developments
?Manage purchasing and inventory controls
?Performs related duties and special projects as assigned

Qualifications:
?Degree in Culinary Arts is preferred or equivalent professional experience
?5-8 years progressive culinary management experience
?Must be knowledgeable on HACCP controls along with proper storage and use of food
?Knowledge of budgets, labor costs, inventory controls
?Strong leadership, coaching and training skills
?Computer skills: proficient in Microsoft Office
?Excellent verbal and written communication skills
?Ability to lift, bend and carry up to 40 lbs.
?Knowledge of safe and sanitary food handling principles
?ServeSafe or Department of Health certification a plus
