Position Description:
True & Essential Meats, a sustainability-oriented USDA-inspected meat processing plant in Virginia's Shenandoah Valley, has opening for an internal operations manager. Ideal candidate has experience processing whole animals, including beef, pork, lamb, and goats, as well as some background with food service/preparation in retail or restaurant setting. Additional skills include: ? Ability to handle meat cutting from primals to sub-primals to final foodservice cuts necessary. Duties include cutting meat for in-house retail sales. ? Ability to demonstrate experience with artisanal-scale processed meat products a plus. T&E would like to grow sales of processed meats, including fresh sausage, smoked and cured meats, and similar products in the near future. ? Candidate should demonstrate understanding of current trends in local and organic meat production, such as sustainability, grass-fed meats, farm-to-fork school programs, and similar trends. ? Successful candidate will be responsible for compliance with USDA meat processing regulations, including HACCP and SSOP oversight. ? Candidate must be passionate about healthy meats, high food quality, creating a culture of dynamic teamwork, and local agricultural revival. Duties will include oversight of 8-10 personnel involved in meat cutting, meat packing, processing of sausage and ground beef, delivery of meats, and plant sanitation. Other duties will include work load scheduling and ordering of meats and meat products. Chosen candidate reports directly to plant ownership. They must demonstrate strong people and management skills.
