* Cut and fabricate specified meats, fish and fowl according to yield guides, portion size and recipes * Monitor and maintain cleanliness, sanitation and organization of assigned work areas * Maintain thorough knowledge of all food products with the ability to skillfully apply culinary techniques * Exhibit a knowledge, understanding and application of various cutting techniques * Work as a team, assisting all guests? and employees? needs and inquiries * Guarantee all products are rotating on a first-in, first-out philosophy * Ensure all requisitions are processed properly and placed in designated area * Identify and safely use all kitchen equipment * Regularly restock all kitchen supplies and food items required for service * Properly label and date all products to ensure sanitation and safekeeping * Apply knife skills required for service * Read, measure and execute cuts of meat and fish * Maintain solid menu knowledge and attention to detail with plate presentation * Versatile in preparing and working in cold area * Assist other butchers as needed in execution of service * Maintain a solid knowledge, understanding of all meat and fish products * Effectively communicate with management, chefs and service staff in order to fulfill and address any issues or needs requested by guests and or other employees * Comply with all departmental policies, procedures, and standards * Maintain complete knowledge of correct maintenance and use of equipment * Abide by State sanitation/Health regulations and Hotel requirements * Transport supplies from the Storeroom and stock in designated areas * Start prep work and production of items needed for the day * Monitor and maintain the steak control sheet/meat tag system to ensure a consistent inventory and food cost * Maintain production charts * Ensure proper storage procedures as specified by Health Department and Hotel requirements * Disinfect and sanitize cutting boards and worktables * Transport empty, dirty pots and pans to the pot wash station * Direct and assist Stewards in order to make clean-up a more efficient process * Breakdown work station and complete closing duties such as return all food items to the proper storage areas, rotate all returned product, wrap, cover, label and date all items being put away, straighten up and organize all storage areas, clean up and wipe down food prep areas, reach-ins/walk-ins, shelves, return all unused and clean utensils/equipment to the specified locations and turn off all equipment not needed for the next shift * Review status of work and follow-up actions required before leaving * Other related duties as necessary
* At least two years of experience in a similar position * Working knowledge of knives and knife skills * Knowledge of equipment to include, slicing machine, juicer, Cryovac machine, and small wares equipment * Thorough knowledge of health, safety and sanitation procedures * Working knowledge of weights, measures and various cooking techniques * Professional appearance and demeanor
