* Monitor all work areas for compliance with Health regulations and follow through on any violation * Maintain close communication with F&B Managers, working to supply their equipment needs * Establish par levels and storage requirements for supplies and equipment, completing requisitions to replenish shortages or additional items needed for the anticipated business * Make routine inspections of all equipment and Kitchen areas to ensure that cleanliness and sanitary procedures are maintained and to ensure that all equipment is in proper working condition * Manage responsibilities to include: creating a work environment that promotes teamwork, performance feedback, recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning processes that encompass the company?s diversity commitment and compliance with company policies * Perform pre-shift meetings with staff, ensuring that service is technically proficient * Monitor supply requisitions to ensure costs are kept to a minimum without losing quality and usage of materials * Review Kitchen and Restaurant service needs from Stewarding throughout the shift and ensure that all requirements are met according to specifications * Practice and observe safety rules and regulations and encourage others to do the same * Respond to emergency situations accordingly * Maintain complete knowledge of and comply with all departmental policies/service procedures/standards and correct equipment use * Meet with the Executive Chef and review the Kitchen needs daily * Ensure that all items are stored in accordance with State/Local Health and Fire Departments regulations and according to Hotel requirements * Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts, adjusting schedules throughout the week to meet the business demands * Inspect grooming and attire of staff; rectify any deficiencies * Monitor and ensure that all temperature and chemical solution requirements are met with regard to dishwashing, pot washing and storage * Monitor and maintain pest control requirements in accordance with Hotel standards * Assist Stewarding Staff with their job functions where needed to ensure optimum cleanliness and service standards * Establish a preventative maintenance program for all machinery and maintain accurate records of program * Prepare contingency plans for equipment which cannot be repaired immediately * Ensure all closing duties for staff are completed before staff sign out * Foster and promote a cooperative working climate, maximizing productivity and employee morale * Other related duties as necessary
* At least six years of experience in a Stewarding department in a similar environment * Four plus years previous Supervisory experience * Basic ability to read and speak Spanish * Strong working knowledge of all Kitchen Steward functions and of all cleaning materials and equipment used * Effective listening abilities and be able to make strong judgment calls * Ability to access all areas of the facility, withstanding various activities such as walking, standing, and frequent bending and kneeling
* Associate's or Bachelor's degree in a related field * Fluency in Spanish
