|Position Description:||Inspired by the success of the French Quarter Wine Festival and modeled after the award winning Meritage Restaurant at the Boston Harbor Hotel in Boston, MA, we are proud to introduce a new approach to dining at the Maison Dupuy Hotel and Restaurant. |
The new concept will offer a wine-centered menu that includes wine characteristics versus wine varietals paired with indigenous/native New Orleans/Gulf Coast influenced style cuisine. Our menu will feature four or five categories of wine characteristics rather than varietals with dishes to compliment those flavor profiles. To further customize the guest experience, every dish on the menu will be available as small plates or large plates, allowing more flexibility in the diners' choices and desires. All or most wines on the menu will be wines that have been or will be featured in past, current and future French Quarter Wine Festivals.
We're looking for an experienced Executive Chef to execute our new restaurant concept and lead our culinary team. The Executive Chef plans, directs, supervises, and controls selection and production of all food items, ensuring the highest level of product quality, presentation, and sanitation. He/She is responsible for menu planning, recipe creation, food ordering, food production, storage, and sanitation as well as labor staffing and scheduling. The Executive Chef also directs the hiring, training, and supervision of all food production and Stewarding employees.
ACF certified "Executive Chef", or Culinary Degree from a recognized Institute of Culinary Arts and equivalent experience
Five plus years experience as an Executive Chef at a fine dining, upscale restaurant, hotel and/or both
Three plus years experience in multi-outlet food production management
Excellent culinary knowledge and skills, with exceptional creative abilities
Outstanding management, organization, communication and leadership skills
Extensive menu development and budget preparation experience
Extensive knowledge of wines
Extensive knowledge of traditional New Orleans/Gulf Coast Cuisine
Able to work a flexible schedule, including weekends and holidays
