|Position Description:||JACKALOPE RANCH -- EXECUTIVE CHEF|
LOCATION: Palm Springs, CA Area
DESCRIPTION: Jackalope Ranch is a newly built facility including a 21,000 sq. ft. building located on 6.4 acres of land, at a very visible intersection of Highway 111. Over $35 Million Invested. With a total seating capacity of 485, Jackalope Ranch features indoor banquet facilities, outdoor banquet facilities, restaurant dining room, private restaurant dining room, lively bar and spectacular grounds.
DINING: Traditional Barbeque, Upscale Progressive Cutting Edge Southwestern & a few Steaks with Southwest kick. Bold flavors, preparations & presentations. Mesa Grill meets Coyote Caf? / Coyote Cantina meets Red Sage, Caf? Annie, and Stephen Pyle Restaurant style of food. There are large indoor and outdoor bars with live entertainment. The premises have two large group rooms with private patios -- each room seating up to 150 indoors and out. There are three event lawns as well for corporate receptions, dinners, non-profit functions, weddings, etc. The land is 6.4 acres. There is also a separate carryout kitchen / to go operation.
POSITION PROFILE: Seeking a hands-on working chef, who is detailed, organized to create and produce the progressive southwestern menus we seek while keeping the pricing affordable to a diverse market that includes wealthy baby boomers that are tired of "finer dining operations" with $50.00 plus average dinner checks. The entrees to be priced in the mid & upper $20's with perhaps a few above $30.00. We will have a lively progressive bar operation. Bolder flavors, textures and presentations will be the rule. Ability to develop a team with excellent training, coaching and organizational skills a must.
COMPENSATION: Base salary is in the $80,000 to $90,000 range with bonus of 2% of cash flow Employer pays 100% of the group health insurance for Executive Chef and qualified dependants including spouses or domestic partners. All uniforms are provided. Paid Vacation. 401K. DCeveloping Profit Sharing program. Work Schedule?six-day weeks in season ; six/five day rotating workweeks in off-season.
Estimate first year sales are $6.5 million plus. Stabilized sales could exceed $8.5 million.
Our most aggressive opening target date is December 1, 2008.

GENERAL: Menu & Concept Development; Staff Hiring, Training, Scheduling, Coaching & Development; Product Specs, Order Guide, Procurement, Product Testing/Product Development, Prep List, Production Charts, Inventory Control; Repair, Maintenance, Sanitation; basically our chefs are responsible for the entire BOH. Naturally, you will not be alone. We have a solid team at HQ that handles payroll, accounts payable, human resources, etc.
BAR: Piano Bar ? nightly. Opportunity for 3/4 piece ensembles
Opportunity for outside concerts, weddings, charity events,, corporate events, community events & of course FESTIVALS (bbq, chili, tamale?....the list is endless) that we can produce, host and stage.
