The Little Nell Hotel is the only hotel in Aspen CO rated AAA Five Diamond and Mobil Five Star. The main hotel restaurant - Montagna - is the recipient of the Wine Spectator Grand Award, Mobil Four Star and AAA Four Diamond awards. Chef Ryan Hardy has recently been nominated for the James Beard award for South West Chef of the Year. Chef Hardy specializes in utilizing fresh local produce. He makes his own preserves, cures his own meats and makes his own cheeses and pasta. We are seeking to fill the position of Pastry Chef. Qualified applicants should have prior experience working in a luxury hotel environment and will possess excellent leadership skills. Experience with a multi-outlet kitchen, and cake design is an advantage.
Position Summary Responsible for daily operation of the pastry shop including: Montagna Restaurant, Room Service, Bar, Pool and Banquets. The Pastry Chef will maintain portion control and food cost, consistently high levels of service, and will display excellent leadership and mentorship skills. The Pastry Chef will be work with the Executive Chef to create innovative, seasonal and local inspired desserts for a constantly evolving menu.
Essential Functions of the Job
Supervises the Pastry Shop to achieve assigned tasks according to kitchen standards.
Maintains cleanliness of all kitchen production and storage areas.
Communicates with the restaurant manager to ensure optimum service levels.
Trains staff to standard performance levels.
Communicates discrepancies from standard with the Executive Chef.
Assures safe work conditions for all personnel.
Communicates any mechanical problems with the Engineering Department.
