Position Description:
Viceroy in Santa Monica is located at the crossroads of Ocean Avenue and Pico Boulevard in one of the most desirable neighborhoods in L.A. This urban retreat at the shore overlooks the Pacific and is minutes away from a wide array of upscale shopping, dining, entertainment and recreational options, including the historic Santa Monica Pier. We are seeking an Executive Chef to join our team!
The successful candidate will oversee all aspects of managing the Kitchen and Kitchen colleagues, ensuring the quality preparation of all menu items and proper handling/ storage of all food items in accordance with standards. Coordinates the purchase of all food and develops menus, maintaining approved food costs and labor costs. In addition, the successful candidate must capable of directing production of food of the highest standards of quality and presentation. Must possess strong culinary skills in both hot and cold preparations. Must understand the fundamentals of food and labor cost controls. Candidates must have a minimum of 3-5 years experience in a similar position working in all areas of a fine dining establishment and have strong supervisory and financial management skills with the ability to train and motivate his/her employees. Diploma or Certificate from a recognized culinary school is highly preferred.
