Chef/Sous Chef for Alaskan Fishing Lodge

Position Description:Working Chef needed for intimate luxurious fishing lodge in Ninilchik, Alaska. This exclusive resort hosts 12 discriminating guests per week from May-September. Candidate should have at least 5 years of culinary experience working in fine dining establishments. Our season is short and intense, so an open mind, creativity and flexibility, plus the ability to work well with others are a must. This is a small, family owned and operated business searching for someone who is not only a great chef but will be able to interact well with guests and also with our other employees. No prima donnas, please. The position includes oceanfront lodging.

Candidate should have a well-rounded knowledge of fine cuisine and be able to create anything at the level of Morton's to French Laundry, including desserts and pastry knowledge a plus. We have an existing menu in place that works well for our guests yet are open to new ideas provided they fall within the lodges existing dining concepts. We create a fantastic dinner party atmosphere every night with many theme nights such as Mardi Gras, Pirate, Western plus tasting menus and many wine-tasting nights. Guests all dine together seated around a large 8-ft round table in full view of the volcanoes across the Inlet. The ability to produce a "WOW" factor, is a must. We want our guests to relish their memories of superb dining in addition to their fantastic fishing experiences during their stay with us. The lodge is our home and the guests are our company. You must exude customer service, hospitality and have a sense of humor and adventure. Our guests are invited in to the kitchen, so you must feel comfortable having them in your space and be able to maintain a good attitude at all times.

Meals required are breakfast, lunch and dinner. Breakfasts are early (4 to 7 a.m.) while lunch is packed for anglers to enjoy while they are out fishing. Dinner begins with appetizers and cocktails at 6 pm and dinner at 7 pm. We send out a questionnaire to each group ahead of time to assist the lodge in planning meals around guest preferences. Candidate will be responsible for ordering as well as ensuring the proper handling and storage of all food items in accordance with hotel standards and sanitation and health regulations.

You must have excellent communication skills, have the ability to maintain the highest standards, you must be a people person and must be able to pass a drug test. This is a remote lodge but has some of the most striking natural beauty you will ever see. You will be working as part of a team. Have fun and work under the midnight sun in a spectacular log lodge with a well-equipped kitchen. You must have a solid track record and impeccable references. This is a wonderful opportunity for the right person.

Deep Creek Fishing Club, Alaskas premier oceanfront log lodge is located on the coast in the quaint village of Ninilchik just 186 miles south of Anchorage and is accessible by road. The lodge sits 300 feet above the ocean, on a bluff overlooking the mouth of Deep Creek and Cook Inlet, perfectly located in the heart of fishing action. The snow- capped volcanoes of Mt. Iliamna and Redoubt beckon just 30 miles across from us while waves crash on to the beach just below us. The 7000 sq ft lodge with its deluxe, private cabins, caters exclusively to groups of up to 12 anglers.
