Position Description:

This position is responsible for managing food production, quality, and presentation in all dining areas and for safety/sanitation in the kitchens.
Job Functions:
Interviewing, hiring, scheduling, training and coaching/counseling staff Preparing profit plans, forecasts, and financial analyses for all culinary operations Establishing pars and controlling inventory of china, glass, silver, kitchen equipment, and rolling stock Designing recipes and plate presentation Maintaining desired food and labor costs Soliciting feedback from guests regarding product quality and delivery Maximizing revenues and profits through proactive marketing strategies Participating in division meetings Conducting regular department meetings
Basic Qualifications:
Degree in culinary arts or ACF Certification Minimum of 8 years experience in food preparation Minimum of 3 years experience at Sous Chef level or above
Additional Qualifications:
Proven employee/guest relations, coaching/counseling, communication, and organization skills Experience with creation of menus for various restaurant concepts and venues Knowledge of POS systems, purchasing systems, and computer systems Professional image representative of property image (often represents Lodge with the media)
Working Conditions:
Physical requirements include considerable standing, walking, bending, reaching, lifting up to 50 lbs., eye/hand coordination, finger dexterity, communicating verbally, and working in extreme temperatures. Schedule will vary according to operating needs and will include days, evenings, weekends, and holidays.
