*To assure that Kitchen operation runs smoothly and effectively as indicated by hotel operational criteria. *Assure profittable operation in accordance with predertermined budget. *Assure that food quality meets/exceeds guest expectations. *Ensure maximization of kitchen to accomodate highest yields in revenue and service *Develop recipes that will distinguish the culinary offereings of the property *Maintain regulations pertaining to food storage, preparation and service. *Active involvement in recruitment,training and development of junior staff.
