DUTIES: Provides day or night supervision of all kitchen staff except utility workers; fills out working menu; monitors food quantity and quality production; prepares soups and sauces; expedites dinner service; oversees closing duties; performs other related duties as required
MINIMUMS: Graduation from an accredited culinary program; garde manger work experience; thorough experience in preparation of soups and sauces; knowledge of continental cuisine; prior supervisory skills; knowledge of all phases of food service; good communication skills
