Food and Beverage Director

Position Description:Purpose of the Job

The Food and Beverage Director is responsible for the overall Food & Beverage operation within their assigned facility. These responsibilities include budgeting and variance reporting, profit and loss control, hiring, development, and others as listed in the accountabilities section of this job description.

Standing Accountabilities

 Lead, model and teach the core values of the company.
 Provide outstanding customer service.
 Hit or exceed budgets and goals.
 Plan and schedule manpower, equipment and supply requirements for the F&B department and maintain accountability for the cost, utilization and performance of employees and equipment.
 Hire, train and develop employees in the food and beverage department, per Human Resources guidelines.
 Maintain control of employee uniforms, ensuring that uniforms and name tags are worn, kept in proper condition and are readily available at all times to employees.
 Implement policies and procedures for food and beverage department.
 Responsible for kitchen cleanliness, organization and preventative equipment maintenance procedures and standards.
 Ensure the quality levels of food and beverage products and maintain quality standards in production, services, facilities and patron satisfaction.
 Develop the annual food and beverage budget and manage by that budget.
 Implement and monitor food and beverage payroll policies, procedures and controls, with an emphasis on minimizing employee costs.
 Maintain the purchase-order system.
 Maintain par stock levels on food and beverage inventories.
 Implement and monitor ordering and receiving program to ensure proper quantity and prices on all purchases.
 Manage menu design and food preparation.
 Coach and manage team in accordance with company philosophies and policies.
 Complete quarterly and annual evaluations in a timely manner.
 Complete company training requirements.
 Ensure a safe workplace for all employees, patrons and guests.

Education and Experience

 Five years of experience as a General Manager or Manager of a $5M+ restaurant, hotel, or club.
 Seven years of experience in front of the house management.
 A College degree is required with a Hospitality or Business degree preferred.
