Position Description:
Maintain a sanitary environment for food and beverage preparation and storage as well as provide clean serviceware and utensils for the entire food and beverage operation (Banquets, restaurant, room service, bar, kitchen and cafeteria.)
-Supervise, give directions and properly motivated members of stewarding department. Delegate dish and equipment washing and silver polishing activities. -Direct and assist stewarding staff with cleanliness of back of the house areas: main kitchen, storage areas, dumpster, loading dock, Staff Dining Room, and warewashing areas. -Maintain inventory, ensure proper circulation and coordinate the distribution of china, glassware, and silver which also includes visual inspection to ensure cleanliness and safe transportation. -Control the equipment storage areas. Cleanliness and good operating condition of house kitchen equipment.
