The University of California, Berkeley, is the preeminent public university in the country. We are currently seeking an Executive Chef for the University House. University House is one of six sub-units within the Chancellor's Immediate Office. It serves as the Chancellor's on-campus residence and as a gathering place for many events, including receptions, meetings, workshops, luncheons, dinners, and other business and social functions.
Responsibilities: -Meet daily with University House Manager to review daily, weekly, and monthly events calendars for University House in order to modify information accordingly -Plan menus and submit them with adequate time for approval by First Lady via University House Manager -Determine table configurations and identify catering, wait person, and bartending needs for events -Confer with University House Manager, Chancellor, and Associate to Chancellor to finalize the various aspects of special events, including dicor and seating arrangements -Prepare grocery lists for food and beverage purchases and undertake shopping for these items -Perform a weekly, detailed analysis of physical inventory, making adjustments to maintain accurate budget information and precise accounting of food items -Ensure adherence to unit's budget by reviewing and controlling expenditures to maintain effective cost controls -Prepare, plate, and serve food and/or supervise caterers in the preparation, presentation, and serving of food at assigned events -Ensure safe preparation and transportation of all food items for off-site events -Oversee ongoing recipe development by taste testing all recipes to ensure that standard procedures for testing are followed, proper flavor profile is attained, and all results are documented -Ensure that food is at proper temperature in accordance with HACCP guidelines and that all breads and self-serve items are fresh -Review existing recipes for correctness and product consistency -Ensure that recipes are prepared in proper proportions and that portion control is maintained -Coordinate use of leftovers with staff by monitoring leftover amounts and determining how best to utilize items -Ensure that all beverage and condiments are fully stocked and well presented -Make recommendations to University House Manager for kitchen and dining equipment inventory needs, repairs, and replacements -Train and supervise kitchen assistants
Requirements: - Extensive culinary background in areas of food preparation and presentation, menu planning, and formal/informal table and banquet settings - Extensive experience as an Executive Chef for a commercial enterprise, educational institution, or single family residence - Excellent ability to apply principles of food production on a variety of levels, from small, casual breakfasts and luncheons to larger, casual and/or more formal luncheons, dinners, buffets, receptions, and catered events - Considerate experience in oversight and supervision of staff and caterers in areas of food prepping, serving, and clean-up - Exceptional ability to provide creativity in menu planning and food presentation, including an extensive repertoire of tried and true recipes for small and large, casual and formal dinners, buffets, banquets, and receptions - Superb skills in cooking and pastry - Necessary skills to conduct food safety and sanitation - Technical skills to maintain a computerized complex relational menu and inventory management database

The annual salary range for this position is $29,700-$54,516.
