Executive Chef for upscale private residential commmunity. Responsible for two dining facilities - casual & fine dining; special events (oyster roasts, weddings, wine dinners, etc.); private parties in members homes. Plans menus; ensures high standards of sanitation & cleanliness; supervisory control of kitchen inventories & supplies, establishing controls to minimize food & supply waste; supervises kitchen staff; develops recipes & techniques for food prep & presentation; projects food & labor costs; regular interaction with management, staff and owners to ensure food & presentation consistently exceeds expectation of members and guests. Graduate of an accredited culinary institute; Minimum of 5-7 years progressive experience in kitchen management w/a minimum of 3-5 years as an executive chef.
Private upscale residential sporting community situated on 5600 acres with a maximum of 325 owners. Amenities include Gun Club, Hunting, Boating, Equestrian, Golf, Inn, & Food and Beverage. F&B operation: 2 dining outlets - casual & fine dining; special events (oyster roasts, banquets, etc.), private catering in owner homes.
