Position Description:
Los Angeles International Airport (LAX) is the worlds fifth busiest passenger airport and ranks sixth in air cargo tonnage handled. Approximately 80 passenger carriers and 20 cargo carriers serve LAX, including all major airlines. There are nine terminals with more than 140 aircraft parking spots for commercial airlines. DNC Travel Hospitality Services operates casual dining concepts in four terminals, as well as, the Los Angeles landmark Encounter Restaurant.
The successful candidate will be responsible for establishing menu plans and food service protocol based on operational goals at the Encounter Restaurant in Los Angeles Airport. Actively participates in management of the kitchen and culinary/kitchen staff of all levels. Develops and implements recommendations to control food and labor costs to achieve financial objectives and improve efficiencies. Orders and secures product within corporate specifications and oversees inventory process. Actively participates in event operations, such as catering functions, to assure quality and consistency. Supervise, schedule and train culinary and kitchen staff. Must maintain a safe and sanitary work environment and exceed all sanitation standards. This position is 80% hands on kitchen management and 20% cooking.
