Position Description:
Border Grill/Ciudad, a three-unit restaurant group, founded by Mary Sue Milliken and Susan Feniger, is searching for an individual to fill the position of Executive Sous Chef for their flagship Santa Monica location. Border Grill/Ciudad is a growing company with a small, tight knit group of dedicated individuals that are passionate about food and service. We expect first and foremost that the individual joining our group share the same passion and want to be a part of creating a memorable experience for our guests.
Position requirements:
-Ability to cook great food -Strong culinary background, with at least 2 years experience as an Executive Sous Chef. Extensive knowledge of ingredient pairing, menu writing, and recipe building. -Knowledge and experience with upscale Latin and or Mexican foods a plus. -Strong organizational skills: attention to administrative detail, able to operate a high volume, quality focused kitchen. -Human resource knowledge: ability to interview, hire and retain talented individuals that are a strong cultural fit; ability to organize, develop, teach, and oversee 20+ employees and entry level managers. Write and present performance evaluations. -Bi-lingual; English and Spanish a plus. -Computer skills: solid working knowledge of word, excel and e-mail. -Relevant financial skills: ability to create financial plans that drive the direction of revenue, cost control, profit margins. In depth knowledge of recipe costing, inventory and food cost procedure. Ability to troubleshoot cost problems. -Intimate knowledge of labor control; must be able to over see proper staff and scheduling. Proactive in the ability to plan cross training and balance wage levels while maintaining a controlled weekly schedule. -Background in high volume banquet and off-site catering desired.
