Position Description:
Candidate should have ten years of food/pastry experience. Knowledge of French pastries, Viennese and American pastries, pull sugar, cake decorating and show pieces. Strong leadership, training and organizational skills. Spanish speaking desired.
The Pastry Chef must have the ability to hire, train, motivate, supervise and discipline all pastry shop associates; maintain a qualified staff by identifying and controlling work relationships, areas of accountability and performance of personnel assigned as well as completing and conducting performance reviews; communicate regularly with the Executive Chef to achieve an excellent rapport throughout the food production department and in developing new menu items; utilize computer software for requisition of items needed for the following day from the food storeroom, non-food storeroom and stewarding department; ensure all equipment is in full working order; ensure a superior production of sweet items, pastries, cakes, ice creams, sorbets, fruit compotes, breads, etc. for all outlets as well as banquets and amenities; establish standard recipes and ensure the compliance with them; make show pieces as needed; prepare exciting and appealing petit fours and mignardises; maintain controls against theft and waste; set up and maintain inventories; prepare reports as requested to develop a more informative database for improved management decision-making; assist in the preparation of the annual budget for the department; assess safety hazards and takes appropriate action; set standards regarding the ratio of covers to labor cost and cost of chemicals and supplies.
