Executive Sous Chef

Position Description:Job Description: 1. Collaborate and assist prominent celebrity Chefs Stephan Pyles and Scott Blackerby in developing and executing our Dragonfly Restaurant Concept. In addition, share responsibilities for room service and group dining functions in our brand new upscale boutique hotel.

2. Efficiently create menu items and organize/monitor food preparation, production and presentation within pre-approved quality standards while maintaining budgeted labor productivity, recipe standards, food cost and purveyor quality.

3. Assist with hiring, scheduling, training and development of staff; departmental orientation, and provide input on performance evaluations.

4. Assist Sales, Catering & banquet staffs with banquets, parties and other events.

Job Requirements:
1. Prefer a graduate of an accredited culinary school with strong creative flair in flavors and presentation

2. Successful experience in culinary competitions preferred

3. Creative skills in menu planning and plate presentation

4. Solid banquet and restaurant food production skills resulting in high quality and consistent plate presentation and taste

5. Strong leadership, motivational and organizational skills

6. Ability to manage payroll costs, costs of goods sold, and other expenses
