Position: Executive Sous Chef  Clipper Adventurer/Clipper Odyssey
Rotation: Approximately 4 months on board/ 1-2 months off
Benefits: Company paid travel expenses, Company paid Medical/Dental/Life Insurance 401K eligibility after 6 months. No expenses on board. Officer privileges.

Preferred experience: Culinary Degree, at least 2 years Management Experience, Fine Dining Experience

Summary Job Responsibilities:

The Executive Sous Chef will be responsible for all aspects of the food service operation as directed by the Executive Chef to provide the passengers and crew with high quality cuisine. He or she will also be responsible to supervise the duties of other galley personnel. The galley will consistently operate under the rules and regulations of the Centers for Disease Control. Communication on all aspects of the food service operation will consistently be discussed with the Executive Chef as well as the Hotel Manager. The Executive Sous Chef is responsible for the following areas:

 Keeping the entire food service operation in an absolutely sanitary condition as per Clipper Cruise Line standards and The Centers for Disease Control standards.
 Must know the proper use of all kitchen equipment and know proper procedures and detergents used for cleaning and sanitizing all equipment.
 Responsible for daily food production and quality of all menu items assigned by the Executive Chef.
 Must be able to prepare all standard menu items within Clipper productions guidelines.
 Stay current on developments in the culinary field so updates can be made to our menus.
 Communicate effectively with the Executive Chef & Hotel Manager and be open for discussion on any matters concerning the operation of the on board hotel department.
 Fill in as Chef de Partie when ever necessary.
 Be sure kitchen is secure during rough seas.
 Ensure good teamwork at all times between the galley and dining room to obtain the best results.
 To train all new galley staff of there responsibilities in relation to their specific duties.
 The Ex. Sous Chef will attend meetings with all other chefs to discuss food preparation, menus and CDC issues.
 Attend D.R. meeting with the Ex. Chef, HM and D.R. staff.
 Attend a nightly line up with D.R. staff to discuss menu knowledge.
 Ex. Sous Chef may be required to discuss dietary needs and general food comments for the passengers.
 Maintain a professional passenger relationship.
 Must maintain appearance and personal hygiene when in the galley and off duty.
 Participate physically in loading of stores
 Involved in evaluations on all galley crew when necessary.
