Supervise, participate, coordinate, direct and administer all phases of the food production in order to maximize profit and maintain high standards and quality for the pastry shop. Develop new dessert menus for banquets, as well as other resort outlets, which include five full service restaurants. 10 - 15 years experience in the field of pastry with international exposure and at least 3 years as a Pastry Shop Manager. Ability to comprehend and follow recipes, expand and condense recipes, produce artistic and unique dessert items. Luxury hotel experience required. Culinary qualifications required. An eye for detail and an artistic flair. Must understand the fundamentals of food and labor cost controls. Experience with wedding cakes, banquets and sugar.
