Heather Ferguson: How many employees
currently work for your company?
Jared Tees: Bourbon House (owned
and operated by Dickie Brennan, of the famed New Orleans
restaurant family) employs about 200 people. Dickie
Brennan, along with his sister Lauren Brennan Brower
and business partner Steve Pettus, also owns and operates
Palace Café, whose culinary focus is contemporary
Creole cuisine, and Dickie Brennan's Steakhouse, an
exclusively USDA Prime steakhouse with a New Orleans
touch. These restaurants employ an additional 200
people.
HF: What are some of your recruiting
challenges?
JT: Finding individuals who are serious
about a career in the restaurant industry. We want
people who have a passion for food and for hospitality
in the truest sense. We love what we do, and take
great pride in our work. It's not just a way to pay
the bills - it's a way of life for us. Our goal as
an employer is to surround ourselves with individuals
who feel the same way and maintain our high standards.
HF: What types of positions do
you frequently recruit for on StarChefs?
JT: Line cooks with management potential.
We are strong believers in promoting from within our
organization. There are individuals in our restaurants
who have worked their way up from line cooks to executive
chefs, from dish washers to kitchen managers, and
from kitchen managers to general managers. There is
tremendous growth potential in all areas of our organization
for talented, hard working, good spirited restaurant
industry professionals.
HF: What is your favorite feature

the country, and the world, for that matter. New Orleans

Dickie Brennan's family has been in the restaurant
